Sweet Potatoes

Here are two different sweet potato recipes that I got from two different sisters!  Both are yummy!

The first we made at Thanksgiving and is a Rachel Ray recipe: Bourbon Pecan Smashed Sweet Potatoes. 

Here are the prep bowls with all the ingredients.

Click the link above for the full recipe and an instructional video of Rachel Ray making these delicious sweet potatoes.   Prep bowls prepared above by my nephew who was a huge help in the kitchen on Thanksgiving.  He prepped the ingredients for all the dishes for us.  I noticed that he enjoyed this and was taking a real interest in cooking.  This gave me an idea for his Christmas present.  More on that later!

The second sweet potato recipe, I made at Christmas.  It’s a sweet potato casserole.

BOTTOM LAYER

  • 5 eggs
  • 8 cups sweet potatoes/yams
  • 1 cup sugar
  • 1 cup milk
  • 2 tablespoon vanilla extract
  • 1/2 cup butter – melted stirred in

Mix all these ingredients together and pour in a greased 9 X 13 pan.

Sweet Potato Casserole bottom layer

TOP LAYER:

  • 3 cups brown sugar
  • 2 cups flour
  • 1 cup pecans chopped
  • ½ cup butter

Mix all these ingredients together and put on top of the potato mixture.

Bake at 350 for 30 – 40 minutes until the top is completely baked.
